The dish in the foreground is babaganoush, which is eggplant dip (yes like melitzanasalata). The other stuff I believe is called ezme.
But it does not matter what you call it because it will probably appear at your table anywhere you eat. It is made from red-peppers and tomatoes
and I rated every restaurant by the quality of the ezme it served.
